can you put oem 18 inch v2 350z wheels on a z31? and if so what spacers would be needed if any?

Yes they will work. You'll need adapters to bring them out flush.
What size adapters you ask? I'd say 1" would do it. This took me about 5 minutes to search, copy and post for you.

I have these on my Shiro. I put one 1" spacers all the way around. It brought them out nicely. -
