    I'm going to start with Latency of 750 on mine and raise it accordingly for idle. Let's say my injectors were flow tested at 680cc @ 43.5 psi. If I took 680/43.5 then multiplied by 37 psi I get 578.39cc. Should I start with this as the injector resize function in nistune, or go with 680cc.

    627cc, not 578cc.
