    How bad would it be......

How bad would running without the heat shields be? Providing i tie everything away from
    the exhaust.

Heat shields? You mean those annoying, rattling, pain in the ass, pieces of metal that randomly appear in a z31?

Ive never had any rattling, but I'll take your word for it

I don't have them on my new manifold on the 86T, or the manifolds on the 84.

Actually lets more heat get exposed to the plastics and wires under the hood thereby making them turn brittle quicker than with the shields installed.

On my 86T restoration, all the shields were missing, and I wound up replacing nearly every plastic/rubber part under the hood and having to replace/repair/rewire the harnesses. I have since installed mint or near mint shields where they belong.

You can run your car without them. You will just have more radiant heat in the engine bay, or heat leak like some people like to say.

So is my alternator going to die?

It is not recommended to confirm proper installation by driving into walls or other barriers as this could cause personal injury or damage to the vehicle.
